I made this smoothie bowl for a very skeptical bunch. Guess what?? They loved it and that surprised them. Eating healthy can taste amazing.
This recipe features the fruit pitaya or dragon fruit. Dragon fruit is pink on the outside and it can be pink on the inside. (1960s hot pink not millennial pink) There is a white fleshed version, however, the pink flesh has more flavor and nutrients.
Pitaya has a lightly sweet taste. This fruit contains magnesium, vitamin C, iron, vitamin B2, antioxidants and fiber. So I guess you can call this a power full smoothie bowl.
I used white chia seed instead of the black chia for one reason, it looked nice against the purple fruit mix. Do you know there is no nutritional difference between white and black chia seed? So either one will deliver the same amount of the plant form of Omega-3s.
Ingredients
2 cups of spinach
Two tablespoons of coconut water
½ cup frozen berries
Two tablespoons of chia seed
Toppings chia seed, granola, berries
Directions
- In a blender put in 2 cups of spinach and coconut water. Whirl until smooth.
- Next add berries and blend again. Add chia seed. Let sit for a few minutes to thicken.
- In a bowl layer the spinach/ berry mix. Next layer in the defrosted pitaya.
- Top with chia seed, granola and fresh berries.
- Share it with a friend.
